Origin
Laab kai set is a regional specialty from northern and northeastern Thailand, especially popular in Chiang Mai and Khon Kaen provinces. Its roots trace back to traditional Lanna customs of consuming raw or lightly cooked meats.

Laab kai consists of finely minced chicken mixed with fermented fish sauce, lime juice, ground chili, and various herbs. The flavor profile combines sourness, spiciness, sweetness, savoriness, and umami in perfect harmony, enhanced by the aromatic scents of galangal, lemongrass, and mint.
